Art & Soul: The Culinary Arts - Ann Arbor Pizza Pop-Up With A Star Trek Theme Inspired By New York

Max Sussman

Max Sussman recently returned to Michigan after he and his brother Eli set up a successful restaurant in New York City now operating out of 30 Rockefeller Plaza. He is now running "Pizza Replicator" as a pop-up pizza restaurant around the Ann Arbor area and talks to Lisa Barry about his pizza creations that he makes himself.

Inspired by New York-style pizza, Max Sussman says the pizzas he makes now in Michigan are more unique than following any certain style. He says he uses only the freshest ingredients and is working with Tammie Gilfoyle of "Tamchop Farms" in Dexter, who is growing ingredients that will keep his pizzas super fresh. 

The name is taken from the Star Trek TV series, but Sussman says you don't have to be a fan of the show or know much about it to enjoy his individually-made pizzas.

The owner of Pizza Replicator says he has thoughts about some day opening his own store location but right now loves the freedom of "popping up" and making and selling pizzas whenever it works for him.

He makes and sells pizza every Sunday at Roos Roast in Ann Arbor, which can be ordered in advance from his Instagram page. He will also be at Ann Arbor Distilling this week making and selling his pizza.
