It's a meat lover's dream.  Camp Bacontakes place this week in the Ann Arbor area.

Zingerman's co-owner AriWeinzweig talks about some of the events and speakers who are part of Camp Bacon.

I also spoke with Fidel Galano, who is one of this year's speakers.  He's an Ann Arbor resident who will share his heritage and love for food.

Galano was born and raised in New York City's Spanish Harlem to immigrant parents from Cuba and Puerto Rico.  Everyone in his family is passionately involved in cooking, mostly Cuban dishes.

Growing up his family cooked for local Spanish eateries in NYC and out of their homes, so it was natural for Fidel to learn the culinary magic of his family.   As noted by Galano, growing up with people that made food their living and who were called upon to cook for every festive occasion, he was destined to learn the family gift.

As told by Galano, cooking his family’s recipes connects him emotionally to great memories of them and of growing up in Spanish Harlem.

“When I cook and taste my family recipes, I am transported to wonderful moments,” Galano says.  “I am linked to cultural celebrations where my family’s food is front and center, and I can see the animated faces of people enjoying our cooking.”
