Art & Soul: The Culinary Arts - From A Driveway To A2 Brick & Mortar, 'Side Biscuit' Opening Soon

Ann Arbor area chef Jordan Balduf has been called the "Wing King of Ann Arbor."  Originally from Buffalo, New York, he says he's been eating chicken wings since he first got teeth!  After operating a successful chicken wing and biscuit pop-up shop for the past 12 weeks, he's now putting together his own takeout restaurant and tells WEMU's Lisa Barry about that in this week's "Art and Soul."

Jordan Balduf has been cooking since he was a young teenager and says, being from Buffalo, New York, good chicken wings are second nature to him.  So, he began selling wings and biscuits out of his driveway these past few months in a business he called "Side Biscuit."

Now he's in the process of setting up a brick-and-mortar shop of the same name at 1232 Packard in Ann Arbor.  He hopes to be open for takeout only in the next month.  He says their plan right now is to be pretty much exclusively carryout and may add beer and wine eventually.

Balduf has been cooking in Ann Arbor for a little over ten years now, working at HOMES Brewery, The Bar at 327 Braun Court, and also at Zingerman's.  He says there is a creative underground food community blossoming in the Ann Arbor-Ypsilanti area, even during our current pandemic.  He looks forward to working with other chefs and farmers and serving delicious wings and different biscuits every week, even though these are difficult times for restaurants.
